Description

My Protein-Packed Fig Chai Indian Lassi celebrates fig season with the perfect blend of chai spice while honoring the traditional Indian lassi. This beloved yogurt smoothie gets my made-over touch for a healthy and nourishing twist!


Ingredients

Scale
  • 2 Cups low-fat yogurt, or yogurt of choice
  • 1 Cup chopped fresh figs, heaping
  • 5 Tablespoons honey, divided
  • 3/4 Teaspoon chai spice
  • 1 Tablespoon rose water
  • 1 1/2 Cups water
  • 2 Cups ice
  • 1/2 Cup pistachios
  • Pinch of salt


Instructions

  1. Preheat your oven to 325°F.
  2. Toss pistachios with 1 tablespoon of honey and a pinch of salt.
  3. Spread them on a parchment-lined baking sheet and roast for about 10 to 12 minutes, stirring halfway through.
  4. Wash, dry, and dice your figs.
  5. When the pistachios have completely cooled, chop them into small pieces.
  6. In a blender, combine the yogurt, figs, honey, chai spice, rose water, water, and ice.
  7. Blend until smooth and creamy, then taste and adjust sweetness if necessary.
  8. Pour into cold glasses, top with crushed pistachios and a couple of fresh fig slices.
  9. Bottoms up and enjoy!
