- 4 Large avocados
- Juice from 2 limes
- 1/2 Cup chopped pickled onions
- 1 Cup halved cherry tomatoes
- 1/2 Cup chopped yellow bell peppers
- 1 Clove of garlic, minced
- 2 Teaspoons garlic granules
- 1 1/4 Teaspoon salt
- Fresh cilantro
Instructions
- Prep your veggies. Cut the tomatoes in half and dice the bell pepper into small pieces. Mince the garlic.
- Chop the cilantro.
- Cut open 3 of the avocados, scoop out the flesh, and mash it up.
- Quickly add the fresh lime juice, pickled onions, and salt to prevent browning.
- Add the tomatoes and bell peppers.
- Add the fresh minced garlic and the garlic granules. Stir everything together.
- Chop up the last avocado into chunks.
- Lightly stir in the chopped avocado and cilantro and give it a taste test. Adjust for salt, garlic, and lime.
- Top with as much chopped cilantro as you prefer and enjoy!
