- 36 Deglet dates
- 1/4 Cup plus 2 tablespoons of unsweetened banana powder
- 1/2 Cup Greek yogurt
- 1/2 Cup cream cheese
- 1 Teaspoon manuka honey
- 1 Teaspoon vanilla extract
- 1/4 Teaspoon vanilla bean powder
- 1/2 Cup Simple Mills honey graham crackers, crushed
- Pinch of salt
Instructions
- Let the cream cheese come to room temperature so it blends easily with the other ingredients.
- Pour the graham crackers onto a plate and crush them using a glass or the bottom of a measuring cup.
- If you can’t find banana powder in stores, make your own by pulsing banana chips in a food processor or blender, until you have a fine powder.
- Once the cream cheese is ready to go, add in the Greek yogurt, banana powder, vanilla, and vanilla bean powder to the same bowl. Blend until smooth using a hand mixer.
- Give it a taste. Depending on how sweet your banana powder is, you may need more or less honey. Transfer the mixture to a plastic bag and snip off the end so you can pipe it into the dates.
- Grab your dates, carefully open each one, and fill them with the cheesecake mixture.
- Roll the tops of each date through the graham cracker crumbs so they stick to the soft filling. Only top the ones you plan to eat right away.
