If you haven’t tried stuffed dates yet, what are you waiting for? Imagine taking the flavors of the desserts you love and filling a tender date with them. It’s one of those combinations that just works. I’ve tried a few variations, and they were delicious! So of course, I started creating my own recipes, experimenting with different types of dates as well. And to toot my own horn… they turned out just as delicious. Toot toot!

If you love bananas, cheesecake, and that classic graham cracker crust, you’re sure to go bananas (yeah, I really said that) over this stuffed treat. They’re velvety, succulent, and the chewy dates add an irresistible brown butter, caramel-like taste and texture. But the best part is that these bites are filled with clean ingredients that won’t cause a sugar crash like a piece of traditional cheesecake would.

HOW I MADE-OVER THESE STUFFED DATES:
This wholesome snack and dessert is more than just tasty, it’s made with ingredients that actually do something for you!
Deglet Noor dates are packed with fiber and antioxidants that support digestion, help reduce inflammation, and even contribute to bone and brain health. Bananas offer natural sweetness along with potassium and vitamin B6 to support muscle function and help you stay energized. Greek yogurt adds a creamy texture while packing in protein, probiotics, and calcium for gut and bone health. Manuka honey contains antibacterial properties and antioxidants that support immune health and fight inflammation. Cream cheese, especially when you go for a lighter version, adds richness along with healthy fats and vitamin A to bring just the right touch of richness. Finally, I use a graham cracker free of seed oils, made with just a few clean, paleo-friendly ingredients.

HERE’S WHAT YOU’LL NEED:
(Use organic ingredients when possible)
Deglet Noor dates
Unsweetened banana chips or powder
Greek yogurt
Cream cheese
Manuka honey
Vanilla extract
Vanilla bean powder
Simple Mills honey graham crackers
THIS IS HOW YOU’LL MAKE IT:
The great thing about stuffed date recipes is that they’re incredibly simple to make and only take a few steps!
Step 1: Let the cream cheese come to room temperature so it blends easily with the other ingredients. To speed things up, I take out the amount I need, cut it into chunks, and let it sit in a large bowl.
Step 2: Gather the other ingredients and measure everything out. Pour the graham crackers onto a plate and crush them using a glass or the bottom of a measuring cup. I only use Simple Mills honey graham crackers in my recipes. I love the taste AND the ingredients, so I always have a few boxes in my pantry!
Step 3: If you can’t find banana powder in stores, you’ve got a few options. You can purchase the kind I use on Amazon—it’s organic but a bit pricey. Or just DIY it by pulsing banana chips without any added sugars or oils in a food processor or blender, until you have a fine powder. Make sure you blend enough to get the full amount needed. And please don’t confuse banana powder (made from ripe, dried bananas) with banana flour (made from green bananas)!
Step 4: Once the cream cheese is ready to go, add in the Greek yogurt, banana powder, vanilla, and vanilla bean powder to the same bowl. Blend until smooth using a hand mixer. I use non-fat yogurt since I use full-fat cream cheese.
Step 5: Give it a taste. Depending on how sweet your banana powder is, you may need more or less honey. Dates are naturally sweet, so the filling doesn’t need much added sweetness. Start with a little, blend again, then taste and adjust as needed. I use manuka honey. It’s expensive, but the benefits are worth it. That’s why I always keep a jar on hand. You can switch it up with another mild-tasting honey as well! Next, transfer the mixture to a plastic bag and snip off the end so you can pipe it into the dates or just use a spoon if that’s more your style.
Step 6: Grab your dates, carefully open each one, and fill them with the cheesecake mixture. It’s fine if the halves separate; the filling holds everything together. But wait, I’m not using Medjool dates like most recipes call for. I’m using Deglet Noor dates instead of their bulkier cousin for two reasons: they’re softer and chewier, and they clock in at just 20 calories each, compared to Medjool dates at 60. Medjool dates may be larger, but I’ll take getting to eat three dates for the price of one any day! That said, if you prefer Medjool dates, feel free to use them. Just know the bigger they are, the more filling they need, which means fewer stuffed dates for you!
Step 7: Roll the tops of each date through the graham cracker crumbs so they stick to the soft filling. Only top the ones you plan to eat right away, since grahams soften over time and lose that bit of crunch.
Step 8: Dig in and enjoy these little bites with big flavor!

SERVING SUGGESTIONS:
These make a perfect dessert bite for brunch, picnics, or dinner parties.
You can also pair them with coffee or tea or tuck them into lunchboxes or snack packs for a clean, energizing treat on the go.
They would be great stacked on a cutting board with fresh fruit, nuts, and dark chocolate for a healthier twist on a dessert board.
MITA’S MUST-KNOW TIP:
When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!
FREQUENTLY ASKED QUESTIONS:
Q: Can I use Medjool dates instead of Deglet Noor?

Q: What if I don’t have graham crackers or want a different topping?
A: No problem. Swap in any crunchy cookie or plain granola-style crumble so it doesn’t overpower the banana cheesecake flavor. Just pick something you’d actually snack on by itself, because if it’s boring on its own, it won’t magically get better on a date!
STORAGE AND LEFTOVERS:
These should last in the fridge for 5 to 7 days. Just check the cream cheese to make sure it hasn’t cracked or dried out.
Or keep them in the freezer for about 2 months. I wrap them in parchment paper, then place them in an airtight glass container. When you’re ready to eat, thaw in the fridge overnight or let them sit on the counter for 10 to 15 minutes.
Only add the graham topping to what you’ll eat immediately; otherwise, it will soften in the fridge and lose its crispy crunch. Crush more graham crackers for the topping as needed!
ADDITIONAL NOTES:
You can swap out the graham crackers for another brand, but they most likely won’t be clean or paleo friendly.
Feel free to use Medjool dates if that’s your preference.
Use whatever cream cheese you like, whether it’s low fat, regular, or even Neufchâtel.
I haven’t tried these with another sweetener, but I think pure maple syrup would work as well!

- 36 Deglet dates
- 1/4 Cup plus 2 tablespoons of unsweetened banana powder
- 1/2 Cup Greek yogurt
- 1/2 Cup cream cheese
- 1 Teaspoon manuka honey
- 1 Teaspoon vanilla extract
- 1/4 Teaspoon vanilla bean powder
- 1/2 Cup Simple Mills honey graham crackers, crushed
- Pinch of salt
