There’s a certain side dish from a fast-food fried chicken spot I grew up with that I still remember, so I had to make it over! My Popeye’s-Inspired Clean Dirty Cauliflower Rice recipe brings back that bold, savory Cajun classic. It delivers all the nostalgia in a lighter, fresher take, with extra veggies!

- 1 Lb. Ground turkey
- 1 12 Oz bag frozen cauliflower rice
- 1 Green bell pepper
- 2 Stalks celery
- 1 Medium yellow onion
- 3 Stalks green onions
- 2 Cloves fresh garlic
- 1 1/2 Teaspoons salt
- 2 Teaspoons garlic granules
- 1 1/2 Teaspoons Cajun seasoning
- 1 Tablespoon olive oil
- 2 Tablespoons chopped parsley
Instructions
- Wash the green bell pepper, celery, green onions, and parsley.
- Chop the bell pepper, celery, and yellow onion into small, even pieces, about 1/2-inch in size. Mince the fresh garlic, slice the green onions, chop the parsley, and set aside for later.
- Place a large skillet over medium heat and add 1 tablespoon of olive oil. Once the pan is warm, add the ground turkey and chopped yellow onion.
- Break the turkey up as it browns and season with 1/2 teaspoon salt and 1/2 teaspoon garlic granules. Cook until lightly golden, for 6-7 minutes.
- Add the chopped green bell peppers and celery. Season with 1/2 teaspoon salt and 1/2 teaspoon garlic granules. Cook until the vegetables soften, still have a little texture, and develop light browning, about 5 minutes.
- Add the minced garlic and stir for 30 seconds. Do not overcook.
- Add the cauliflower rice and season again with 1/2 teaspoon salt, 1 teaspoon garlic granules, and 1 1/2 teaspoons Cajun seasoning. Stir well to coat everything. Stir occasionally until the cauliflower is tender, about 7-8 minutes. Add as many sliced green onions as you like and let them cook for 2 minutes to soften.
- Taste and adjust seasonings if desired.
- Top with more green onions and a sprinkle of fresh parsley for color.
- Dig in and enjoy!
