My Popeye’s-Inspired Clean Dirty Cauliflower Rice recipe brings back that bold, savory Cajun classic. It delivers all the nostalgia in a lighter, fresher take, with extra veggies!

POPEYE’S-INSPIRED CLEAN DIRTY CAULIFLOWER RICE
Do y’all remember the dirty rice from Popeyes? I’ll be honest, I haven’t been there in decades, so I’m not even sure if they still have it. But when I was a kid, we used to get it all the time. I just remember it being so good!
Years later, I found myself craving that same flavor, but I didn’t want to drive anywhere to grab some. And to be honest, I just really wasn’t into fast food anymore. So of course, I thought to myself, Mita, why don’t you make it at home? So I did! And it turned out to be way easier to make than I expected and so much healthier.
Thus, my Popeye’s-Inspired Clean Dirty Cauliflower Rice was born! Now, don’t get me wrong, there’s nothing wrong with real rice. But when I want something a little lighter with more fiber, I turn to cauliflower rice instead, which is pretty much a staple in my home. Amping up the veggies also gives it more texture and depth. But like the original, I stick with green bell peppers for that classic Cajun base, but because I’m me, I always add a bit of extra color.
The result is bold, savory, and intensely satisfying with just the right amount of heat. It pairs perfectly with whatever you serve it next to, especially a healthier fried chicken dish. If this sounds good to you, you’re right.

I kept the bold Cajun flavor you love but upgraded the ingredients to add more nutrients and real benefits to every bite.
Ground turkey provides lean protein that supports muscle strength while keeping the dish lighter than traditional versions. Cauliflower rice adds fiber, antioxidants, and key vitamins like vitamin C while lowering the carb count. Green bell peppers contain vitamin C and protective antioxidants that support immune health and add natural sweetness and color. Celery provides fiber and hydration. Onion contains beneficial plant compounds and antioxidants that support overall wellness and deepen flavor naturally. Garlic adds bold flavor and contains compounds known to support heart and immune health. Green onions provide freshness, vitamin K, and extra nutrients while giving the dish a bright finish.

HERE’S WHAT YOU’LL NEED:

Ground turkey
Cauliflower rice
Green bell pepper
Celery
Yellow onion
Green onions
Fresh garlic

THIS IS HOW YOU’LL MAKE IT:
Are you ready to make this side dish at home?
Start by washing all your vegetables and getting everything prepped. Wash the bell pepper, celery, green onions, and parsley. Chop the bell pepper, celery, and yellow onion into small, even pieces, about 1/2-inch in size so everything cooks evenly. Mince the fresh garlic, slice the green onions, chop the parsley, and set aside for later.
Place a large skillet over medium heat and add a drizzle of olive oil. Once the pan is warm, add the ground turkey and chopped yellow onion. I often cook ground meat with onions to save time. Season with a bit of salt and garlic granules. Break the turkey up as it browns and cook until lightly golden.
Next, add the chopped green bell peppers and celery. If you like a little color, you can add half of the green pepper and half of another bell pepper in whatever color you have on hand. Season again lightly with more salt and garlic granules. Cook until the vegetables soften but still have a little texture. Add the minced garlic at this stage and stir for about 30 seconds. Do not let the garlic burn!
For this dish, I use frozen cauliflower rice because the work has already been done and there’s no need to thaw it beforehand! Can you tell, I really love saving time? Add the cauliflower rice and the Cajun seasoning and stir well to coat everything. Seasoning in layers builds deeper flavor and keeps everything balanced. Stir occasionally until the cauliflower is tender. Add the green onions and let them cook for 2 minutes to soften.
Quick note about the Cajun seasoning. I used the one by Frontier Co-op, but they don’t seem to sell it on Amazon. If you can find it in the stores, do pick it up! Otherwise, another brand should work well. Make sure it doesn’t have a ton of added salt or preservatives!
Taste and adjust the seasoning. If you prefer more Cajun flavor or heat, add a little extra. It also deepens the color.
Top with more green onions and a sprinkle of fresh parsley for color.
Dig in and enjoy!

MITA’S MUST-KNOW TIP:
When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!

Q: Can I stick closer to the original and use ground beef instead of turkey?
A: Yes, you can swap in ground beef if you prefer a richer flavor. Just drain any excess grease before adding the vegetables so the dish doesn’t get too heavy!
Q: How do I make this side even spicier?
A: You can add more Cajun seasoning at the end or sprinkle in a pinch of cayenne for extra heat. Taste as you go and adjust to your preference.
Q: Can I substitute red onions or red bell peppers?
A: Go for it. Both red onions and red bell peppers work beautifully in this dish.
Q: This sounds good, but does this taste like traditional dirty rice?
A: It keeps the bold Cajun flavor and savory depth you expect, but the cauliflower rice makes it lighter in texture than classic versions made with white rice. I prefer this one because I don’t feel terrible after eating it!
STORAGE AND LEFTOVERS:
Store leftovers in an airtight container in the refrigerator for up to 5 days.
Reheat in a skillet over medium heat until heated through, or microwave in 30-second intervals, stirring in between.
If the mixture looks slightly dry after reheating, add a small splash of water or broth to loosen it up.
You can also freeze it in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
ADDITIONAL NOTES:
If your cauliflower rice releases extra moisture, let it cook uncovered for a few extra minutes so it can evaporate.
Cut your vegetables evenly, so they cook at the same rate and give you consistent texture in every bite.

- 1 Lb. Ground turkey
- 1 12 Oz bag frozen cauliflower rice
- 1 Green bell pepper
- 2 Stalks celery
- 1 Medium yellow onion
- 3 Stalks green onions
- 2 Cloves fresh garlic
- 1 1/2 Teaspoons salt
- 2 Teaspoons garlic granules
- 1 1/2 Teaspoons Cajun seasoning
- 1 Tablespoon olive oil
- 2 Tablespoons chopped parsley
Instructions
- Wash the green bell pepper, celery, green onions, and parsley.
- Chop the bell pepper, celery, and yellow onion into small, even pieces, about 1/2-inch in size. Mince the fresh garlic, slice the green onions, chop the parsley, and set aside for later.
- Place a large skillet over medium heat and add 1 tablespoon of olive oil. Once the pan is warm, add the ground turkey and chopped yellow onion.
- Break the turkey up as it browns and season with 1/2 teaspoon salt and 1/2 teaspoon garlic granules. Cook until lightly golden, for 6-7 minutes.
- Add the chopped green bell peppers and celery. Season with 1/2 teaspoon salt and 1/2 teaspoon garlic granules. Cook until the vegetables soften, still have a little texture, and develop light browning, about 5 minutes.
- Add the minced garlic and stir for 30 seconds. Do not overcook.
- Add the cauliflower rice and season again with 1/2 teaspoon salt, 1 teaspoon garlic granules, and 1 1/2 teaspoons Cajun seasoning. Stir well to coat everything. Stir occasionally until the cauliflower is tender, about 7-8 minutes. Add as many sliced green onions as you like and let them cook for 2 minutes to soften.
- Taste and adjust seasonings if desired.
- Top with more green onions and a sprinkle of fresh parsley for color.
- Dig in and enjoy!
