Come on, who doesn’t love candy? I know I do, and I would be lying if I told you that just because I create clean, wholesome recipes means I never indulge. I absolutely do. I just do it at home with real ingredients, and I make it better.
Now, do you remember those turtle candies from your childhood, with that chewy, sticky caramel, crunchy pecans, all enrobed in milk chocolate? They were incredible, but they were loaded with refined sugar, corn syrup, and artificial flavors. I would eat the 3-pack and genuinely feel awful after. That does not happen when I make my own, and honestly, I might eat one, two, or even four without a single regret!

Defatted peanut butter powder offers plant-based protein and healthy fats with a lower fat content than traditional peanut butter. Pecans are one of the most antioxidant-rich tree nuts around and provide heart-healthy monounsaturated fats. Chocolate chips sweetened with unrefined coconut sugar skip the refined sugar and contain flavonoids that support cardiovascular health.

THIS IS HOW YOU’LL MAKE IT:
Once you see how easy this is to make, you’re never going to buy store-bought turtle candy again!
Start by soaking your dates in boiling water for several minutes to soften them up. I personally prefer Deglet Noor dates over Medjool dates for this recipe. Medjool dates are larger and much higher in calories, while Deglet Noor dates are smaller and lighter, which means I can use more of them, and that is never a bad thing! Just keep in mind that if you use Medjool dates, your measurements will be different since they are significantly larger. If you have seen my stuffed cheesecake date recipe, you already know how I feel about Deglet Noor dates!
While your dates are soaking, go ahead and toast your pecans in a dry pan over medium heat for a few minutes, stirring occasionally, until they are fragrant and lightly golden. Then set them aside and let them cool completely before using them. Do not walk too far away because nuts can burn quickly!
When the dates are done bathing, remove them from the water, but do not worry about draining them completely. That little bit of extra moisture adds depth and helps everything come together smoothly when blending. Reserve the liquid. Add the dates to a food processor along with your defatted peanut butter powder and salt. Pulse for about 30 to 45 seconds, stopping to scrape down the sides halfway through, until everything is well blended. Do not worry if it looks slightly chunky with a few bits here and there. It does not have to be perfect! If needed, add a bit of the reserved liquid to assist with blending if it’s too dry.
Scoop the mixture and roll it into balls, place them on a parchment paper-lined plate, then flatten each one slightly into a round disc about the size of a half dollar. A wet spoon helps with this. You want to keep it slightly thick so the pecans have something to grip onto. Pop them into the freezer for a few minutes to firm up before dipping. This step makes a real difference because a firmer disc holds its shape better when you dunk it in the chocolate.
Now melt your chocolate chips in the microwave in 30-second increments, stirring well between each round, until smooth. Other recipes may call for coconut oil to keep the chocolate glossy and pourable, but this recipe does not need it. We are making candy here, and we actually want that chocolate to set up firm and hold its shape.
Once your discs are firm, dunk just the top half of each one into the melted chocolate and let the excess fall off, then place them on the same parchment-lined plate or tray. I prefer to only dunk the top half because the date and peanut butter base is already so good and sweet that it does not need to be completely covered, and it keeps things a little lighter, too. That said, if you prefer to fully enrobe yours, go right ahead, just know you may need a little extra chocolate to get the job done.
Next, press four whole toasted pecans into the sides of each disc so they stick out. Fair warning, this part gets a little messy! If you want to give your turtles a little extra personality, press two chocolate chips on top for eyes.
Pop the whole tray into the freezer for several minutes until the chocolate is fully set and they lift cleanly off the parchment paper. If you want that little extra savory finish, add the tiniest fleck of flaky salt on top before they go into the freezer.
That’s it! You just made your own turtle candy with real ingredients, a peanut butter twist, and zero refined sugar.

When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!
FREQUENTLY ASKED QUESTIONS:
Q: My date mixture is too sticky to roll. What did I do wrong?
A: Don’t worry, you didn’t do anything wrong! Dates are naturally sticky, especially if they are extra moist. Just wet your hands slightly before rolling, and that stickiness will behave itself.
Q: I cannot find defatted peanut butter powder. Can I use regular peanut butter?
A: You can, but just know that regular peanut butter will change the texture of your date mixture and make it softer and stickier. If you go that route, start with a small amount and add more as needed until the mixture holds together. Defatted peanut butter powder is actually pretty easy to find on Amazon, and I always have a link in the recipe card for you!
Q: I might need new chocolate next time because the one I bought is setting too fast, and I cannot drizzle it. Help!
A: Just pop it back in the microwave for another 10 seconds, stir it well, and work quickly. Melted chocolate is a little dramatic and does not like to be kept waiting!
STORAGE AND LEFTOVERS:
Store your turtle candies in an airtight container in the fridge for up to 2 weeks.
You can also freeze them for 3 months. Just place them in a single layer on a baking sheet first until the chocolate is fully set, then transfer them to a freezer-safe container with parchment paper between the layers so they do not stick together.
If you freeze them, let them sit at room temperature for about 10 minutes before eating so the date mixture softens slightly.
ADDITIONAL NOTES:
Deglet Noor dates are smaller and less sweet than Medjool dates, so if you swap them out, start with fewer Medjool dates and adjust from there, since they are significantly larger and much sweeter.
Do not skip toasting the pecans. That extra few minutes in the pan deepens their flavor and gives them a crunch that makes a real difference in the finished candy.
Wet your hands slightly before rolling the date mixture into balls to keep things from getting too sticky.
The chocolate will set up on its own at room temperature, but if you are in a hurry, pop them in the fridge for about fifteen minutes to speed things along.

- 16 Deglet Noor dates
- 5 Tablespoons defatted peanut butter powder
- 32 Pecan halves
- 3/4 Cup chocolate
- 1/4 Teaspoon salt, more for sprinkling
Instructions
- Soak the dates in boiling water for 7 to 10 minutes until softened. Remove but do not fully drain. Reserve liquid.
- Toast pecans in a dry pan over medium heat for 5 minutes, stirring occasionally, until fragrant and lightly golden. Set aside to cool completely.
- Add dates, peanut butter powder, and salt to a food processor. Pulse for 30 to 45 seconds, scraping down the sides halfway through, until well blended. If it’s too dry, add a teaspoon of reserved date water at a time and pulse again until it holds together when pressed but is not too sticky or wet.
- Scoop and roll mixture into 8 balls. Place on a parchment lined plate and flatten each into a disc about the size of a half dollar. Keep them slightly thick so the pecans have a place to fit.
- Freeze for 5 minutes to firm up before dunking.
- Melt chocolate chips in the microwave in 30-second increments, stirring between each round, until smooth.
- Dunk the top half of each disc into the melted chocolate and place back on parchment. If desired, you can fully enrobe the entire turtle instead. You may need a little extra chocolate.
- Press 4 pecans into the sides of each disc so they stick out and resemble limbs. Place 2 chocolate chips on top for eyes if desired.
- Freeze for 15 to 20 minutes until fully set.
- Top with a sprinkle of salt before freezing if desired.
