NUTRITIOUS PIZZA-FIED EGGPLANT LASAGNA

Who doesn’t love Italian food? Of course, Italian cuisine goes far beyond pizza and lasagna, but let’s be honest… those two classics hold a special place in our hearts!

So, what do you make when you’re craving lasagna but want something that won’t weigh you down? That balance guides nearly every recipe I create. I want a meal to be filling while still giving my body lots of nourishing ingredients.

That is exactly what my Nutritious Pizza-fied Eggplant Lasagna brings to the menu. It tastes rich and deeply savory, with plenty of lean protein, vegetables, and just the right amount of cheese. You get a hearty, cozy dinner that feels both wholesome and indulgent.

I started making this recipe several years ago when I was feeling lazy one night and didn’t have the energy to prepare my homemade spaghetti sauce. I had a couple of jars of pizza sauce lying around, and I thought to myself, “I’m pretty sure this is going to taste good.” And I was right!

Unlike traditional spaghetti sauce, pizza sauce often has a brighter tomato taste and a more oregano-forward flavor. Those differences give this lasagna its pizza-fied spin.

I also love how simple it is to make. You don’t need to boil a single noodle, and that always feels like a win! I’ve served this eggplant lasagna to family and friends, and everyone says the same thing at the end: “Can I get some to go?”

HOW I MADE OVER THIS LASAGNA:

I gave this classic dish a nutritious makeover with lean protein, colorful vegetables, simple ingredients, and a lighter layer of cheese.

Eggplant offers fiber, manganese, potassium, and antioxidants. Ground turkey provides protein, B vitamins, selenium, zinc, and phosphorus. Pizza sauce delivers lycopene, vitamin C, and potassium from tomatoes. Bell peppers supply vitamins A, C, and B6, plus folate and potassium. Onions add vitamin C, vitamin B6, folate, potassium, and natural antioxidants. Spinach contributes vitamins A, C, and K, along with folate, iron, and magnesium. Mozzarella cheese brings protein, calcium, phosphorus, and vitamin B12. Garlic offers manganese, vitamin B6, vitamin C, and selenium. Fresh oregano lends vitamin K, iron, manganese, and natural antioxidants. Olive oil rounds out the list with monounsaturated fats, vitamins E and K, and plant-based antioxidants.

Turkey eggplant lasagna

THIS IS HOW YOU’LL MAKE IT:

Start by preheating your oven to 425°F. Wash all the vegetables and the oregano.

Cut the eggplant lengthwise into thin strips so they mimic traditional lasagna noodles. Arrange the pieces in a single layer on lined baking sheets, then lightly coat both sides with olive oil spray. Roast the eggplant, flip each strip, and continue cooking the other side. The pieces should feel soft and flexible, and a fork should pierce through them easily. Firm slices may remain difficult to cut after you assemble the lasagna. To save time, cook both trays simultaneously if possible!

While the eggplant roasts, chop the onion and bell pepper, mince the fresh garlic, and roughly chop the oregano. Thaw the spinach, then squeeze out as much liquid as possible. Removing that extra moisture will help prevent a watery lasagna.

Once the eggplant feels completely tender, remove it from the oven and set it aside. Reduce the oven temperature to 350°F.

Heat the olive oil in a large, deep skillet over medium heat. Add the onion and salt, then sauté until the pieces soften and develop some color.

Add the ground turkey and break it into small pieces as it cooks. Once the meat begins to brown, stir in more salt, garlic granules, onion powder, fresh garlic, pizza seasoning, and the bay leaf. Seasoning the dish in layers adds depth throughout the entire filling. If you cannot find pizza seasoning, use Italian seasoning instead. Continue cooking until no pink remains.

Add the bell pepper, spinach, and pizza sauce. Stir in the remaining salt, garlic granules, onion powder, and more pizza seasoning. Let everything simmer uncovered until the pepper softens and the sauce becomes thick. Stir in most of the fresh oregano near the end, then taste the mixture and adjust the seasonings as needed. Remove the bay leaf before assembling the lasagna.

Spread a thin layer of the turkey and pizza sauce mixture across the bottom of a baking dish. Add the first layer of roasted eggplant, cover it with more of the turkey mixture, and sprinkle mozzarella over the top. Repeat this order for the second layer. For the third and final layer, add the remaining eggplant, turkey mixture, and mozzarella, then finish with a sprinkling of pizza seasoning. Divide each component carefully as you work so you have enough for all three layers.

Bake the lasagna uncovered until the sauce bubbles around the edges and the mozzarella melts. Sprinkle the remaining fresh oregano over the top, then let everything rest before slicing.

When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!

A: Use an equal amount of Italian seasoning. You’ll still get those familiar herbs that make the whole dish taste like pizza night meets lasagna night.

A: No, you don’t want to do that! Keep roasting it in 3-minute increments until it feels soft and flexible. If the eggplant goes into the lasagna firm, you might need power tools to cut through it!

STORAGE AND LEFTOVERS:

Store leftover lasagna in an airtight container in the refrigerator for 3 to 4 days.

Reheat individual portions in the microwave or warm them in a covered baking dish at 350°F until the center reaches 165°F.

Freeze individual slices in airtight containers for up to 2 months. Thaw them overnight in the refrigerator before reheating.

ADDITIONAL NOTES:

Squeeze as much liquid as possible from the thawed spinach before adding it to the pan. Extra water can thin the sauce.

Keep the filling thick before assembling the lasagna. If your pizza sauce has a thinner consistency, let the mixture simmer uncovered for a few extra minutes.

  • 1 Large bell pepper
  • 1 Large yellow onion or 1 1/2 medium yellow onions
  • 1 16-ounce bag frozen spinach
  • 8 Ounces shredded mozzarella cheese
  • 3 Large garlic cloves
  • 2 Tablespoons chopped fresh oregano, divided
  • 2 1/2 Teaspoons salt, divided
  • 2 1/2 Teaspoons garlic granules, divided
  • 2 Teaspoons onion powder, divided
  • 2 Teaspoons pizza seasoning or Italian seasoning, divided
  • 1 Bay leaf
  • 1 Tablespoon olive oil, plus more for brushing the eggplant

Instructions

  1. Preheat the oven to 425°F.
  2. Wash all the vegetables and the oregano. Cut the eggplant lengthwise into strips no thicker than 1/4 inch. Arrange them in a single layer on lined baking sheets, then lightly coat both sides with olive oil spray.
  3. Roast for 10 to 12 minutes. Flip and roast for another 8 to 10 minutes.
  4. While the eggplant roasts, chop the onion and bell pepper, mince the garlic, and roughly chop the oregano. Thaw the spinach, then squeeze out as much liquid as possible.
  5. When the eggplant pieces feel soft and a fork pierces through them easily, remove them from the oven and set aside. Reduce the oven temperature to 350°F.
  6. Heat the olive oil in a large pan over medium heat. Add the onion and 1/2 teaspoon salt. Sauté for about 6 minutes, until the onion softens and develops some color.
  7. Add the ground turkey and break it into small pieces. Once it begins to brown, stir in 1 teaspoon salt, 1 1/2 teaspoons garlic granules, 1 teaspoon onion powder, the fresh garlic, 1 teaspoon pizza seasoning, and the bay leaf. Continue cooking until no pink remains and the turkey reaches 165°F, about 8 to 10 minutes total.
  8. Add the bell pepper, spinach, and pizza sauce. Stir in the remaining 1 teaspoon salt, 1 teaspoon garlic granules, 1 teaspoon onion powder, and 3/4 teaspoon pizza seasoning. Simmer uncovered over medium-low heat for 15 minutes. Stir in 1 1/2 tablespoons fresh oregano during the final 2 to 3 minutes. Taste and adjust the seasonings as needed, then remove the bay leaf.
  9. Spread a thin layer of the turkey and pizza sauce mixture across the bottom of a 9 x 13-inch baking dish. Add the first layer of eggplant, cover it with more of the turkey mixture, and sprinkle mozzarella over the top. Repeat this order for the second layer. For the third and final layer, add the remaining eggplant, turkey mixture, and mozzarella, then finish with 1/4 teaspoon pizza seasoning. Divide each component carefully so you have enough for all three layers.
  10. Bake uncovered for 25 to 30 minutes, until the sauce bubbles around the edges and the mozzarella melts. Sprinkle the remaining 1/2 tablespoon fresh oregano over the top. Rest for 10 minutes before slicing.
