Funny enough, I didn’t always love ice cream. I know, weird, right? As a kid, I was all about it, literally racing to the ice cream truck every summer. But as I got older, it wasn’t my favorite anymore. It was just way too cold! I know, weird again! Plus, I’m the type who’d rather dig into carbs than custards, puddings, or plain old ice cream. However, if that ice cream is stuffed with cookies, nuts, or cake? Oh, then I’m all in!

A few years ago, something shifted, and suddenly, all I craved was ice cream. But the store-bought stuff was filled with additives and loaded with refined sugar. Then the Ninja CREAMi launched, and now I make homemade, healthy ice creams, frozen yogurts, and fruit-packed sorbets from scratch in my kitchen.

But don’t worry if you don’t have one because you can still make this ice cream! So let me introduce you to my very first frozen treat: my Creamy Dreamy Piña Colada Mojito Lite Ice Cream. Like the name promises, it’s rich, velvety, and packed with all the tropical flavors of a piña colada and a mojito. Two of the best drinks in one lighter, more nutritious ice cream? Yes, please! Summer might still be a little way off, but with this treat, you can at least pretend you’re lounging on a sunny beach somewhere!

HOW I MADE-OVER THIS ICE CREAM:

There are no unnecessary ingredients, additives, or thickeners. Coconut milk is rich in healthy fats that promote satiety and support heart health while creating a smooth, creamy texture. Coconut water is naturally low in calories and high in potassium, which helps regulate blood pressure and maintain hydration. Pineapple is packed with vitamin C and bromelain, an enzyme that supports digestion and reduces inflammation. Coconut nectar is a natural sweetener rich in vitamins, minerals, and antioxidants. It has a lower glycemic index than refined sugar, which means it causes a slower rise in blood sugar. That makes it a smarter choice for blood sugar management. Lime delivers a boost of vitamin C to strengthen the immune system, while fresh mint adds a refreshing flavor and supports digestion. Together, these ingredients create a nutrient-packed combination that hydrates, aids digestion, and supports overall health!

This recipe is nut-free, gluten-free, refined-sugar-free, egg-free, dairy-free, soy-free, paleo, grain-free, vegetarian, and vegan.

HERE’S WHAT YOU’LL NEED:

Coconut milk
Coconut water
Shredded unsweetened coconut
Pineapple, frozen
Coconut nectar
Lime
Fresh mint
Salt

THIS IS HOW YOU’LL MAKE IT:

Making ice cream with a Ninja CREAMi is so easy! I’m sure you’ve seen recipes all over the internet, and for good reason. Plus, store-bought ice cream isn’t cheap; tiny cartons can cost anywhere from $6 to $10. So why not invest in a Ninja CREAMi and make your own? You can grab one online with my link at Amazon or on the Ninja site. 

Roast more pineapple than you think you’ll need. It shrinks as it cooks, and you’ll definitely want extra for topping. Let the pineapple cool before using.

In a blender, combine coconut milk, coconut water, roasted pineapple, coconut nectar, lime juice, lime zest, shredded coconut, mint leaves, and salt. When measuring the roasted pineapple, really pack it in! I also recommend using full-fat coconut shreds for the best flavor. I also prefer pink coconut water because I think it’s sweeter. Blend until smooth. If you prefer, you can mix everything in a large liquid measuring cup or bowl and blend with an immersion blender.

NOTE: If you’ve seen any of my other recipes that include coconut milk, you know I absolutely LOVE this one by Thai Kitchen because it’s so smooth and creamy. You can purchase it on Amazon, and yes, it’s pricier, but the quality makes all the difference.

Taste and adjust the sweetness if needed.

Pour the mixture into the Ninja CREAMi container, making sure not to exceed the max fill line. Freeze for the required 24 hours. Sorry, I don’t make the rules! Once frozen, blend according to the instructions. For this recipe, I use the Lite Ice Cream setting.

At first, the texture will be a bit powdery. This is normal. Make a tunnel with a spoon, then add a few tablespoons of coconut milk and a handful of roasted pineapple chunks. Re-spin, and your ice cream will transform into a velvety, smooth treat.

No CREAMi? No problem! Pour the prepared base into a loaf pan or freezer-safe container. For the first two hours, stir the mixture every 20 to 35 minutes to break up ice crystals and create a creamy texture.

Scoop into a bowl, add a fresh mint leaf for garnish, and dig in. Most importantly, picture yourself on a beautiful beach as you enjoy this cocktail-inspired treat!

SERVING SUGGESTIONS:

Scoop this onto a piece of lite coconut cake, sandwich it between 2 cookies, or eat it all on its own!

SUBSTITUTIONS, TIPS, AND NOTES:

Coconut nectar can be hard to find, so I’ve included a link for it in the ingredients. If you love coconut treats as much as I do, it’s worth keeping a bottle on hand. Otherwise, pure maple syrup makes a great substitute.

No limes? Bottled juice will work in a pinch.

If you're making this without a Ninja CREAMi, you’ll need to put in a little extra effort. For the first two hours, stir the mixture every 20 to 35 minutes to prevent ice crystals and create a creamy texture.

If you're using fresh pineapple, cut it into chunks and roast for 20 minutes. Stir, then keep roasting until the edges caramelize and turn golden brown.

I love using pink coconut water because it is sweeter, but you can use whatever coconut water you like to drink!

STORAGE AND LEFTOVERS:

Store in the freezer for up to 2 weeks.  When ready to serve, allow it to sit outside for 5 - 10 minutes.  As it softens, it will get creamy and luscious again.  If you prefer, you can always add a little coconut milk and blend in the CREAMi.

Instructions

  1. Preheat the oven to 400°F.
  2. Roast thawed or fresh pineapple in the oven for 20 minutes. Stir, then continue roasting until it develops color, about another 15 minutes, depending on the size of the chunks. Let the pineapple cool.
  3. In a blender, combine coconut milk, coconut water, roasted pineapple, coconut nectar, lime juice, lime zest, shredded coconut, mint leaves, and salt. Blend until smooth.
  4. Taste and adjust the sweetness if needed.
  5. Pour the mixture into the Ninja CREAMi container, ensuring you don’t exceed the max fill line. Freeze for 24 hours.
  6. Once frozen, blend on the Lite Ice Cream setting. The texture will be a bit powdery at first. This is normal. Make a tunnel with a spoon, add a few tablespoons of coconut milk and a handful of roasted pineapple chunks, then re-spin. Your ice cream will become velvety smooth.
  7. No Ninja CREAMi? No problem! Pour the prepared base into a loaf pan. Stir the mixture thoroughly every 20 to 35 minutes for the first two hours.
  8. Scoop into a bowl, add a fresh mint leaf for garnish, and dig in.
  9. And most importantly, don’t forget to imagine yourself on a beautiful beach while indulging in this reimagined cocktail-inspired ice cream!
