You can either buy it here on Amazon or you can still make this dessert without it, and I’ll show you how. Making ice cream at home has never been easier. Just blend up your ingredients, pop the mix in the freezer, then let the machine work its magic.

HOW I MADE-OVER THIS ICE CREAM:
This recipe is packed with nutrient-rich ingredients. Yes, there’s a little cream cheese, but we’re all about balance at Mita’s Made-Over Meals! When enjoyed in moderation, cream cheese provides vitamin A and can be a good source of calcium, protein, and healthy fats, which are essential for muscle and bone health.
Pure coconut milk is also rich in healthy fats, particularly medium-chain triglycerides (MCTs), which may support brain function and energy levels. Coconut water is a natural hydrating drink loaded with electrolytes like potassium, making it great for post-workout recovery. Blueberries are bursting with antioxidants, vitamins, and fiber, which help promote heart health and fight inflammation. Greek yogurt is a protein-packed, calcium-rich food that supports muscle repair and bone strength. And instead of refined sugars, pure maple syrup offers a natural sweetness along with minerals like manganese and zinc. THIS IS HOW YOU’LL MAKE IT:
If you have one, then you know that making ice cream, sorbets, smoothies, fro-yo, and a variety of other frozen treats in a Ninja CREAMi couldn’t be easier! So, let’s get to it!
Combine coconut milk, coconut water, blueberries, Greek yogurt, cream cheese, pure maple syrup, shredded coconut, and salt in a blender and blend until smooth. You can also mix everything in a bowl or large liquid measuring cup, then use an immersion blender.
If you’ve checked out my other coconut milk-based recipes, you know I absolutely LOVE this one by Thai Kitchen. You can grab it on Amazon or Target. I know it’s a bit pricey, but if you love coconut in all forms, I think you’ll prefer this one over the rest.
Give it a taste and, depending on how sweet your blueberries are, adjust the sweetness if necessary. Pour the mixture into your CREAMi container, making sure not to exceed the max fill line. Freeze for 24 hours. I know, it’s a long time, but good things come to those who wait!
Once the wait is over, blend according to the Lite Ice Cream setting instructions. The texture may look powdery at first, but don’t worry, that’s completely normal! Make a little tunnel in the center, add a few tablespoons of coconut milk, and crumble in some honey graham crackers for that classic cheesecake taste.
My favorite graham crackers are the ones by Simple Mills. They’re made with just a few clean, paleo-friendly ingredients and can be found online or in many retailers. Re-spin the mixture, and your ice cream will become perfectly smooth and velvety!
If you don’t have a CREAMi, that’s OK! You’ll just need a little extra patience. Prepare the base and pour it into a loaf pan or freezer-safe container. For the first two hours, stir the mixture thoroughly every 20 to 35 minutes.
Once it’s set, scoop it into a bowl, top with extra blueberries and crushed graham crackers, and enjoy!

SERVING SUGGESTIONS:

MITA’S MUST-KNOW TIP:
When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!
