There are certain flavors that instantly feel familiar. Kahlua is one of them. It shows up in espresso martinis, dessert drinks, and those cozy after-dinner sips that feel a little indulgent.

However, traditional coffee liqueurs rely heavily on alcohol and refined sugar. That makes them more of a special-occasion thing than something I want to keep reaching for at home. See, I want the flavor without the baggage!

If you want to turn the base into a more traditional version, you can absolutely add dark rum.

HOW I MADE-OVER THIS MIXER:

Instead of alcohol and coloring, this version comes together with just a few simple ingredients!

Coffee forms the base of this mixer and brings natural antioxidants along with that bold, familiar flavor that makes Kahlua so recognizable. Coconut sugar adds sweetness with a caramel-like note and offers trace minerals you won’t find in refined sugar. Cocoa powder delivers richness and depth while providing antioxidants that complement the coffee beautifully. Molasses adds a deeper, more complex note and provides minerals like iron, calcium, and magnesium in small amounts. Vanilla smooths everything out and ties all the flavors into one balanced sip.

The result is a clean, versatile mixer that delivers classic flavor in a more intentional way!

This recipe is gluten-free, dairy-free, refined-sugar-free, nut-free, soy-free, egg-free, grain-free, vegetarian, and vegan.

HERE’S WHAT YOU’LL NEED:

Strong-brewed coffee or instant coffee
Coconut sugar
Cocoa powder
Vanilla extract
Molasses (optional)

THIS IS HOW YOU’LL MAKE IT:

Are you ready for how easy this is to make?

Start by brewing a strong cup of coffee. I use instant coffee and typically use two packets to ensure it’s nice and strong.

Add the hot coffee, coconut sugar, and cocoa powder to a small saucepan. Whisk until smooth and fully combined.

Bring the mixture to a gentle simmer over medium heat, stirring frequently as it reduces slightly and becomes glossy.

NOTE: This mixer thickens more as it cools, especially once it spends time in the fridge. Don’t worry if it stays on the thinner side, because it’s meant to mix into drinks where flavor matters more than thickness!

Remove the saucepan from the heat and stir in the vanilla extract and molasses if you’re using it. I highly recommend the molasses since it adds a little extra depth. But you’ll still get the Kahlua flavor without it. You can also use less, taste, and add more if you’d like.

Let the mixer cool, then transfer it to a jar and refrigerate.

When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!
