The National Cherry Blossom Festival fills the city with parades, pop-up bars, spring markets, and streets lined with stunning cherry blossoms. After a long winter on the East Coast, everyone waits for this moment because it signals that warmer days are finally on the way!
I wanted to celebrate this iconic event and share that excitement with you. That’s exactly what my Cherry Blossom Brunch Mocktail is all about!
This refreshing mocktail blends tart cherry flavor with delicate Sakura powder, which comes from finely ground Japanese cherry blossom petals. Sakura delivers a subtle floral note that tastes light, elegant, and perfectly spring-inspired. Honestly, could this powder be any more fitting?

This mocktail is more than just a pretty drink. It’s made with ingredients that bring both flavor and real benefits to your glass!
Coconut water adds natural hydration and electrolytes to help keep you refreshed and energized. Tart cherry juice delivers antioxidants and supports recovery while adding that bold, tangy flavor. Sakura powder brings a delicate floral note along with plant compounds that support overall wellness.
This is not your typical sugary drink; this mocktail is just as nourishing as it is delicious!
This recipe is nut-free, gluten-free, refined-sugar-free, egg-free, dairy-free, soy-free, paleo, grain-free, vegetarian, and vegan.
HERE’S WHAT YOU’LL NEED:

Coconut water
Tart cherry juice
Sakura powder
Sparkling water
Edible rose petals
THIS IS HOW YOU’LL MAKE IT:
Start by adding the coconut water, the cherry juice, and the Sakura powder to a glass or shaker. Mix well using a fork, shaker, or frother until the powder fully dissolves and blends smoothly.
The cherry juice will deepen the color, but the flavor still comes through perfectly.
I couldn’t find the exact Sakura powder I used on Amazon anymore, but I’ve included one I’ve used before, and it’s extremely similar and just as good.
I love using pink coconut water because it’s extra sweet. But use any coconut water you prefer!
Divide the mixture into two glasses over ice, then top each with sparkling water.
Add a few edible rose petals, take a sip, and enjoy cherry blossom season in a glass!

SERVING SUGGESTIONS:
Serve chilled over ice in a clear glass to show off the deep color.

When perfecting any recipe, the right amount of salt, spices, and sweeteners depends on the size and flavor of the produce you use, and that might be different from what I used when I developed this recipe. Your zucchini might be tiny compared to mine, your strawberries could be on the verge of being jam, and your tomatoes might be less tomato-y than expected, so taste as you go! If you add more veggies or swap anything in, a little seasoning tweak might be needed. You can totally make this dish your own, and if you go a little overboard, you can probably fix it. But tasting often means you won’t need a backup plan… or a backup meal!
